  1. Get 2 cups self raising flour
  2. Make ready 5 tblspoon margarine
  3. Get 6 passion fruits
  4. Take 3/4 cups Castor sugar
  5. Take 1/2 cup icing sugar
  6. Prepare 3 eggs
  7. Prepare 1 cup milk
  8. Take 1 teaspoon lemon
Steps to make Passion fruit cake:
  1. Wash your passions and remove the seeds into a bowl Add 1 cup warm water and let it sit for 5-7mins or until cool to extract the juice.
  2. Whisk using a fork and sieve to tap the juice only. Use 3/4 and save the other 1/4 for creaming.
  3. Sift your flour and set aside.
  4. Separate the egg York and white. Beat the egg white to a soft peak. Set aside.
  5. Preheat your oven to 175degress C.
  6. Grease and flour your baking tin.
  7. In a cup of milk, add the lemon juice and let it sit for 5 mins. The milk will appear broken. This acts as an alternate to butter milk.
  8. In a bowl add your sugar and cream with 3 tblspoon margarine. Whisk until whitish. Add the egg York one at a time while continuing to beat.
  9. Add half of the flour and buttermilk and fold.
  10. Add again the other half of flour, butter milk and the passion fruit pulp.
  11. Add the egg white and fold gently to a soft batter.
  12. Pour into your baking tin and bake for 50mins or until a skewer inserted comes out dry.
  13. Remove from oven and set aside to cool.
  14. In a bowl add your icing sugar, 2 tblspoon melted margarine and juice. Stir to combine. Put your bowl on steaming water and stir for 2mins to make it shine. Let it cool.
  15. Pour on top of your cake.
  16. Yeeeees!! It is ready to serve. Best when chilled ๐Ÿ˜‹๐Ÿ˜‹
