Instructions to make Homemade Fruit Cake:
  1. In a glass bowl, add the candied fruits, the chopped dates, and the rum/brandy. Mix and set it aside.
  2. In a piece of muslin cloth, tie up the cloves, cinnamon and garlic.
  3. In a large saucepan, drop in the tied-up muslin, both the sugars, the butter, salt, water, and raisins. Bring to a boil, while stirring constantly.
  4. Now, reduce the flame and simmer this mixture for 5 mins. Keep stirring to ensure that all the sugar has dissolved.
  5. Once done, turn off the heat and let the mixture cool for 10 mins.
  6. After 10 mins, pre-treat your oven at 160 degree Celsius. Line a 7"by 7" square baking dish with parchment paper/foil.
  7. Remove the muslin cloth from the saucepan.
  8. In a small bowl, whisk together the egg and the vanilla. Now, gently add this mixture into the lukewarm saucepan. Mix immediately to prevent scrambling of the egg.
  9. Also add in the flour, baking powder, candied fruits, dates and almonds. Mix well.
  10. Pour this heavy batter into the baking dish.
  11. Bake for 15-20 mins, or till the toothpick inserted in the centre comes out clean.
  12. Let the cake rest on a rack for 30 mins, before serving.
  13. Enjoy this delicious fruit cake with some tea!
  14. Tip 1: If possible, soak the candied fruits in the rum/brandy overnight at room temperature. This helps enhance the flavours.
