  1. Get 1.5 kg Whole chicken
  2. Get Salt 1 tbsp or more
  3. Get 2 tbsp Sumac
  4. Take 1 tbsp Ground cumin
  5. Get 1 tbsp Ground cinnamon
  6. Get 1 tbsp Cayenne pepper powder
  7. Get 1 tbsp Paprika
  8. Take 6-7 tbsp Hung curd
  9. Make ready 5-6 tbsp Olive oil
  10. Make ready Garlic cloves minced 6 to 7

Rinse and pat dry the Chicken breasts. Put one breast at a time in a zipper bag (Smooth side facing up). Using a mallet, pound the chicken gently till it is evenly flattened into a steak. (Like a Schnitzell). Don't use too much force or the chicken will be mashed to a paste.

Steps to make Arabic Mashawi Chicken.. #Grilling/Barbecue:
  1. Make deep slits across the chicken.
  2. Marinate it with all the spices. Cover and leave it in the refrigerator overnight. This is important.
  3. Preheat oven to 240 °.
  4. Heat a barbecue or chargrill pan to medium high and grill it for about 8 to 10 minutes until a bit charred turning it over every now and then. Baste it with oil before doing it.
  5. Transfer it to a lined baking tray and roast it until done.
  6. Serve it hot with Lebanese Garlic Sauce and Pita bread.
