Prepare 5/6 Jumbo Prawns
Get 1 onion (ground to a fine paste)
Make ready 1 tsp garlic paste
Take 1 tsp ginger paste

Make ready 1 tsp red chilli powder
Make ready 1 tsp cumin powder
Prepare 1 tsp coriander powder

Get 4-5 green chillies (ground to a paste)
Take 1 tsp black mustard seeds
Get 2 tbsp Mustard oil

Steps to make Masala Jumbo Prawn:
Clean the prawns.Rub salt and turmeric powder on prawns and lightly fry them in smoking hot oil.
Into the same oil add mustard seeds and allow to crackle. (Unless you allow mustard seeds to sputter, it would add a bitter taste to the curry.)
Add onion and green chilli paste. Sauté till onions turn translucent.Add ginger-garlic paste, red chilli powder, turmeric powder, cumin powder, coriander powder and salt. Sauté. Then add tomato and fry nicely. - Add water to bring the gravy to desired consistency.
When water stats boiling, add prawns to the gravy. Cover and cook for 5 mins over slow flame. Add garam masala and chopped coriander leaves to the curry. Switch off the flame. Enjoy this with steamed rice/roti.
