  1. Add all vegetables to a bowl. Add vinegar and evoo and pepper. Mix by hand. Squeeze over lemon juice.
  2. Split between two serving bowls, then put cheese on top and sprinkle over oregano. Garnish with mint. Final splash of evoo.
