  1. Take 500 g minced beef
  2. Prepare 1 pouch microwavable rice
  3. Make ready 1/2 bunch spring onions, finely chopped
  4. Prepare 1 red chilli, de-seeded & finely chopped
  5. Take 2 cloves garlic, chopped
  6. Prepare 100 g mushrooms, sliced
  7. Get 1 tsp ground ginger
  8. Prepare 3 tbsp light soy sauce
  9. Make ready pinch black pepper
Steps to make Spicy Beef Stir Fry:
  1. Place a large frying pan over a medium heat & brown the mince in batches. Set aside.Add about 2 tbsp oil to the pan & cook the mushrooms for about 2 minutes until starting to colour. Add the spring onions, chilli & garlic. Cook for another 2 minutes & add the rice. Stir well to coat the rice & cook for 4 minutes.
  2. Add the mince back to the pan & stir everything together until combined. - Add the ginger & soy sauce, stir again & simmer for 5 minutes stirring occasionally. - Serve immediately.
