Instructions to make Murg Tangdi Kabaabs:
  1. Clean and trim excess fat and skin from the thighs. Dry them with clean, absorbent kitchen towel. Make three to four long deep incisions. Add lemon juice and set aside. Pound ginger and garlic to a paste. Hang Yoghurt for 15-20 minutes to get to drain off excess water.
  2. Roast Gram Flour on a non stick pan on low heat, stirring constantly. Cool and mix with hung curd, Ginger-garlic paste, Turmeric and Red chilli powders, Garam masala, Tandoori masala, Sumac, Salt and Green chillies made into a paste along with Garlic and Ginger.
  3. Marinate chicken drumsticks with the above mixture and refrigerate for one to two hours. Skewer marinated chicken drumsticks or and roast in a moderately hot tandoor or alternatively bake in a preheated at 220° for five minutes. Reduce oven temperture to 180° and further cook for 15-20 minutes or till completely cooked.
  4. Serve hot sprinkled with some Chat masala and Naans go best with this one but you can serve with anything you like.
