Take 1/2:cup Tamarind pulp

Make ready As per taste cumin powder, fennel powder,
Take As per taste: ginger powder, coriander powder, Black pepper,
Get 2 tablespoons Chopped coriander
Make ready 2 tablespoons Lemon juice
Get 1 tsp Cooking oil
Make ready to taste Salt
Take as required Khara Boondi for garnish
Instructions to make Pani Puri Chaat:
Wash the green leaves and roughly chop them. Chop the chillies. In a blender jar, add all, along with oil, lemon juice, a little water and blend to a paste.
Add cold water as per desired consistency and blend again. Strain the mixture in a bowl. Add all the spices as per taste. Stir well. Now the green spicy pudina water is ready.Keep in fridge.
To make sweet tamarind water, mix jaggery, tamarind pulp and add 2 cups cold water. Mix well till Jaggery is dissolved. Strain the mixture. Add the above-mentioned spices as per along with cold water as per taste. Keep in fridge.
To make potato and chana filling for puris, mash the boiled and peeled potatoes well with a masher. Add boiled chana/ sprouted moong and chopped coriander leaves and mix well. Add spices as per taste. Make them into small balls for easy stuffing.
Assemble the green water, garnish with khara Boondi, tamarind water and potato filling in serving bowls. Keep puris in a basket. To serve, break puri in center, add some potato balls stuffing, pour spoonfuls of both the prepared waters and serve the yummylicious Paani Puri chaat!
