The ingredients needed to make Malai kofta:
Get 2 cups grated lauki
Prepare 5 tablespoon gram flour
Make ready 2 tablespoon rice flour
Prepare 1/4 teaspoon turmeric powder
Take 1 green chilli finely chopped
Make ready 1/2 tablespoon ginger garlic paste
Get 2 tablespoons finely chopped onion
Make ready As needed Oil for deep frying
Take to taste Salt

Prepare 2 medium tomatoes
Get 2 tablespoons cashew nuts soaked in water for 20 minutes
Take 1/2 teaspoon cumin seeds
Get 1/2 tablespoon ginger garlic paste
Prepare 2 medium onions, finely chopped
Get 1 teaspoon coriander powder
Take 1/2 teaspoon red chilli powder
Prepare 1/2 teaspoon garam masala powder
Get 1/4 teaspoon turmeric powder
Get 1/4 cup thick curd
Take 3/4 cup water
Take 2 tablespoon oil
Prepare to taste Salt
Steps to make Malai kofta:
Peel and grate lauki. Squeeze out the water completely and keep that water for making gravy.
Take squeezed grated lauki in a large bowl.add gram flour, rice flour, turmeric powder, ginger garlic paste, finely chopped green chilli, finely chopped onion and salt.
Mix all ingredients well. Mixture should have a thick consistency to make round shaped balls. If it is watery then add 1-2 teaspoon gram flour and mix. Do not keep this mixture idle for long time since lauki releases water over time and it will make mixture soggy and you will not be able to make kofta balls.
Meanwhile heat the oil in kadai for deep frying,grease your hand with some oil. Take small portion and make round balls.
By the time, oil should be hot enough to fry. Drop the kofta carefully into hot oil and fry it till they are golden brown from all the sides. Keep moving the koftas.
Once kofta are brown from all the sides remove them on paper towel lined plate.
Take all ingredients for paste (onion,tomato,ginger, garlic, green chilli) in grinder.
Grind into a smooth paste.
Heat the oil in a pan on medium heat. Once hot add whole spices. Fry it, till you get nice aroma of the spices.
Then add prepared ground paste.
Cook it till all the moisture evaporates and oil start to leave from the sides.do stir in between.
Then add lauki water to make the gravy consistency.
Lower the heat and then add whisked yogurt.
Add immediately stir it well till everything is mixed.
Add garam masala and kasoori methi. Mix it well.
Add kofta, stir gently and serve.
