Khoa, khoya, or mawa is a dairy product, originating from the Indian subcontinent, widely used in the cuisines of the Indian subcontinent, encompassing India, Nepal, Bangladesh and Pakistan. It is made of either dried whole milk or milk thickened by heating in an open iron pan.

  1. Prepare 1.5 kg Full cream milk
  2. Get 1/2 bowl Long grain soaked and ghee roasted basmati rice
  3. Take 1/2 bowl Mix dry fruits
  4. Take 1 tsp cardamom powder
  5. Make ready To taste Sugar
  6. Make ready 1 pinch saffron strands mixed in milk
  7. Make ready 1/2 bowl homemade khoya (prepared in advance)

Khoya also known as mawa or khoa is dried evaporated milk solids. the milk is slowly simmered in a large iron kadai, till all its moisture evaporates and it reduces to solids. Steps to make Khoya kheer:
  1. Boil the milk in a heavy base pan and add soaked and roasted rice And mix dryfruits of your choice. Cook for one or two hours or until rice are perfectly cooked. Add saffron milk too.
  2. Now add grated khoya to the prepared kheer and add sugar. Keep stirring till both are dissolved.
  3. Garnish with almonds, pistachio and cardamom powder. Serve hot or cold as per one’s wish.
