My spin on this is to boil the corn in coconut milk on low heat and serve with some of the thickened liquid poured over the corn. Akara and Akamu is a typical weekend breakfast in Nigeria.   1. Wash your brown beans with water until the brown cover is totally seperated from the beans then soak for 30mins to get the beans soft.
  2. Wash red bell pepper, remove the seed and set aside
  3. Wash your large red pepper and set aside
  4. Wash fresh ginger and set aside
  5. Wash your large onion and set aside
  6. After 30mins of waiting for the beans to get soft add all the above ingredients that has been washed and set aside, grind everything together (slightly add water so as not to loose thickness)
  7. After grinding, transfer to a bowl, add 2 seasoning cubes, salt(carefully so a not to over add), 2 table spoon of palm oil and stair all together.
  8. Pour 50cl vegetable oil to frying pan under medium heat
  9. Once it's hot, start adding your bean paste to the oil with a table spoon and keep monitoring it, one part i golden brown, turn the frying mixture with a frying spoon or fork monitor it to be sure the other side has turned golden brown then you remove. repeat the whole process, once you are done, set aside in a seive.
  10. Mix your fresh akamu in a bowl with little quantity of water, enure it's not too watery(between watery and thickness)
  11. Pour water into a kettle and cook to boiling point
  12. Gently pour the boiling water into the dissolved akamu in a circular motion and watch it beome thick(if it doesn't get thick, pour into a pot and keep stirring)
  13. Add sugar and stir well
  14. Serve with full cream milk, also serve your akara
