- Score the rind into diamonds about a cm squared
- Wrap the base of the joint in foil leaving only the rind exposed.
- Cook the gammon for 30 mins per 500g plus 30 mins. For the first hour of the cook, turn the oven up to 200 C.
- Then unwrap the joint and continue cooking at 190 C until it’s finished.
- Leave to rest for 20 mins before carving.
