The ingredients needed to make Prawn Roast / Eraal Varuval:
  1. Take 300 grams Tiger Prawns / large sized prawns
  2. Get 2.5 tablespoons Cooking oil
  3. Make ready 1 tablespoon Fennel seeds
  4. Take 3/4 tablespoon Cumin
  5. Make ready Onion medium sized 2 finely chopped
  6. Take 2 tsp Salt or as per taste
  7. Take 1 tablespoon Ginger garlic paste
  8. Get 3/4 teaspoon Garlic crushed
  9. Prepare 1/2 tablespoon Turmeric powder
  10. Take 3/4 teaspoon Coriander powder
  11. Take 2 tablespoons Red chilli powder
  12. Take 1/4 tablespoon Garam masala powder
  13. Take 1/4 glass Water
  14. Prepare 1 Teaspoon Red chilli flakes a or as preferred
  15. Make ready As needed Curry leaves chopped for garnishing a sprigful

Make a paste of red chillies with water and also grind the ginger and garlic together to make ginger garlic paste. Heat oil in a pan and add the fennel seeds. Now add the red chilly paste. Heat oil in a pan, add fennel seeds, onions and ginger&garlic, sauté until onions turns pale and transparent.

Instructions to make Prawn Roast / Eraal Varuval:
  1. In a mixer, take fennel seeds and cumin seeds. Grind both into fine powder. Keep it aside.
  2. Heat oil in a wok. Add the onions and sauté. Add ginger garlic paste. Add half of the salt while sautéing the onions. Keep sautéing the onions until they lose moisture.
  3. Now add the dry powders one by one except the garam masala powder and sauté the masala until raw smell leaves.
  4. Then add the cleaned, deveined prawns. Toss the prawns in the masala. Add garam masala. Cover and cook the prawns until prawn gives out water and looks par cooked. Now add the crushed garlic. Cover the wok again and cook until prawns get cooked.
  5. Then remove the lid and turn the heat high to take the entire moisture away and roast the prawns. Finally sprinkle red chilli flakes. Throw in some chopped curry leaves. Give a quick toss. Switch off the heat. Prawn Varuval is ready. Serve hot.

Now add the red chilly paste. Heat oil in a pan, add fennel seeds, onions and ginger&garlic, sauté until onions turns pale and transparent. Karuveppilai Eral Varuval, a very aromatic Prawn Masala flavored with Curry Leaves. This is a simple preparation where prawns are marinated with fresh ground masala and cooked to perfection.
