Get 1 1/2 cup clean blackeye beans
Make ready 1 small to medium size onion
Take to taste Salt
Prepare 1 large egg
Take 1 habanero pepper (optional)

Instructions to make Akara:
Soak your beans with some warm water in bowl.Let it sit for at least 20 minutes.
Peel off the skin by rubbing them against each other or use a grater. When using the grater be careful not to cut yourself.
Once most of the skin is off, carefully strain it off until all the skin is separated from the beans leaving the beans squeaky clean.
Add some water to the clean beans and let it sit for 10 minutes.
Remove the skin from the onion and cut in half. Chop one half of the onion finely. Chop the other half into rough cuts.
Strain the beans through a sieve and pour in the blender. Add the egg and the rough chopped onions to the blender.
Add about one third cup water. The batter should be like a thick custard. If the blender blade isn’t moving add water but at a little at a time until you reach the correct consistency.
Once everything is blended pour in a bowl and scrape out what is left with a spoon or spatula.
Add the chopped onion and season with salt to taste. Be careful as it becomes salty after frying. Mix with a whisk for about 2 to 3 minutes.
Heat some cooking oil in pan, enough for the batter to float. Make sure the oil is hot before frying.
Scoop with a dessert spoon and fry until golden brown on both sides.
Remove and drain on a paper towel. - Serve with some pap or bread.
