  1. Make ready 500 gms chopped vegetables like carrots, beans, cabbage,sweet corn,etc

  6. Get 1 tablespoon freshly grated ginger

Instructions to make Veg Thukpa:
  1. Heat oil in a saucepan and sauté the grated ginger for 1/2 a minute on medium heat
  2. Add the chopped vegetables and sauté for 3-5 minutes
  3. Add salt to taste, black pepper powder, soy sauce and mix well
  4. Add at least 2 cups of water and bring it to boil
  5. Reduce heat and cook covered until vegetables are half done
  6. Add the noodles and mix well and let the soup simmer covered until the noodles and veggies soften.
  7. Transfer to serving bowls and garnish with grated radish and chilli sauce
