Get 500 gm Carrots
Make ready 100 gm sugar
Prepare 2 tbsp Ghee
Prepare 2 tsp cardamom powder
Make ready 1/4 cup Desiccated coconut
Take 1/4 cup Cashews powder
Make ready 1/4 cup Mawa/khoya
Take 2 tbsp sugar powder
Make ready 2 tbsp finely chopped Pistachio

Firstly rinse, peel and grate all carrots.
In a heavy kadai heat ghee and add grated carrots mix carrots and ghee well…cook it for 15 minutes
Now add sugar and 1tsp cardamom powder….. mix well and continue to cook on low - medium flame, you will see carrots begin to release moisture.
Cover and cook until carrots evaporate completely.
In another pan heat 1/2tsp ghee add desiccated coconut and saute in low flame until it turn automatic
Now add cashew powder, mawa, sugar powder and cardamom powder mix well,
Stir continuously for another 2-3 minutes or until it become thick and binding consistency.
Now when the temperature come down to slightly hot then knead it and spread it evenly in a greased tray, with the help of cookie cutter or small bowl cut round shape burfi pieces…
Similarly, spread prepared carrot mixture evenly in a greased tray and cut round shape burfi pieces…
Place red burfi over the white burfi and press it very lightly…garnished it with chopped pistachios in center.
